Green moong stuffed paratha
GREEN MOONG STUFFED PARATHA

Ingredients
- 1 cup whole moong beans soaked overnight
- 1/2 cup finely chopped onions (optional)
- 1/2 tsp salt
- 1/2 tsp + 1/2 tsp red chilli powder
- 1/4 tsp Raw mango powder / amchur
- 2 – 3 Tbsp ghee
- 1/4 tsp jeera or roasted jeera pwdr
- 1 cup whole wheat flour
- 1/4 tsp garam masala ( optional , add if adding onions )

METHOD
Soak the moong for 4 hrs or overnight .
Pressure cook till soft .
The mung should be dry and cooked. So don’t add too much water while boiling.
Now knead semi soft dough from whole wheat flour. Add little salt, red chilli powder and a tsp of ghee in the flour. Cover and rest for 10 mins.
When moong cools down, add the other ingredients . Mix well.
Stuffing for paratha is ready.
*If you find the stuffing a little wet adjust by adding 1 – 2 tsp of roasted gram flour in it.
Now take big lemon size ball of dough. Roll in 3” thick roti.
Add the moong stuffing in middle and bring all edges together and seal it .
Now coat it in dry flour and gently roll in a paratha.
Heat a griddle and roast the paratha with little ghee on both sides untill golden .
