INGREDIENTS

  • White kabuli chana / chickpeas – 1 cup
  • Onion sliced – 2 small
  • Ginger garlic paste – 1 1/2 tsp
  • Green chilli – 4 or as per taste
  • Cashew – 5 or 6
  • Curd – 1/4 cup
  • Coriander leaves – 3 cup
  • Mint leaves – 1/2 cup
  • Coriander pwdr – 2 tsp
  • Turmeric pwdr – 1/4 tsp
  • Garam masala / kitchen king masala – 1 tsp
  • Kasoori methi pwdr – 1/2 tsp
  • Sugar – 1/2 tsp [ optional ]
  • Fresh cream – 1 tbsp
  • Oil – 2 tsp
  • Butter / ghee + oil – 2 tbs[
  • Salt to taste

PREPARATION

  1. Clean ,wash .rinse and soak the chickpeas overnight .
  2. Pressure cook with salt upto 4 whistles till it is cooked well .
  3. **** Pressure cook on high flame till first whistle. After the first whistle lower the flame and cook upto 3 or 4 whistles – you will get perfect cooked soft chanas .
  4. Drain the water and keep the chanas aside.
  5. Heat 2 tsp oil in a pan ,add onions and fry till translucent.
  6. Add ginger garlic paste and cook till raw smell leaves .
  7. Add green chilli + cashews and stir fry for few secs.
  8. Add turmeric pwdr + garam masala pwdr + coriander pwdr + salt and stir fry .
  9. Add coriander leaves + mint leaves and mix well.
  10. Stir fry for a min till the leaves shrink and off the flame.
  11. Allow the mixture to cool.
  12. Transfer this mixture to a mixie jar and add the curd.
  13. Grind it into a fine paste and keep aside.

METHOD

Heat butter + oil in a pan.

Add the paste and stir fry for a minute.

Add the cooked chanas + sugar  and mix well.

Adjust little water if required .[gravy has to be thick and not thin ]

Simmer on low flame for a minute.

Add kasoori methi pwdr + cream and mix well .

Off the flame .

Hariyali chole is ready to serve .

Serve hot with any rice items or any Indian bread items

NOTES

  1. You can avoid cashews if you want .
  2. Use fresh coriander and mint leaves for bright colour.
  3. Adjust spices as per taste.
  4. Instead  curd , u can use tomato .
  5. Instead of chole, u can add fried mixed veges /paneer etc .
  6. It is a must try gravy .
  7. Even non vegetarians can try this gravy by adding small pieces of  fried / boiled  chicken.
