Hyderabadi rote cookies
ROAT / ROTE HYDERABADI COOKIES / HYDERABADI DUM KE ROTE
Crispy from outside and soft chewy from inside cookies are famous during Muharram in Hyderabad.
INGREDIENTS
- Maida – 1 cup
- Sugar – 1/2 cup
- Fine Suji – 1/4 cup
- Khoya – 30 grams
- Desi ghee – 50 ml
- Oil – 50 ml
- Milk – 50 ml
- Cardamom pwd – 1 tsp
- Poppy seeds – 1 tbsp
- Cashews halved – few
PREPARATION
Take oil + ghee + khoya + sugar + milk in a mixie jar and blend well for sometime .
Take maida + suji in a mixing bowl and mix well .
Gradually add the blended mixture little by little and knead it into a stiff pliable dough .
Keep the dough aside for 10 mins .
Roll it into a thick sheet and cut roundels or any shapes using cookie cutters.
Preheat the oven at 180*C .
Spread the poppy seeds on a plate .
Cover the bottom of the cookies with the poppy seeds .
Top each cookie with cashew .
Arrange the cookies on a baking tray .
Bake it for 20 to 25 mins on 180 * C till the cookies are done .
Once done allow it to cool .
Serve the cookies .
Store in airtight container.
NOTES
- If the dough is wet add little flour and if it is hard add little milk and knead .
- You can add dry fruit pwdr / Saffron also .
- Adjust sugar as per taste ,I added less .
- Don’t powder the sugar .
- In Hyderabad they r made in big sizes.
- Instead of maida you can try wheat flour .
