INSTANT KOMBDI VADE / MALVANI VADE

Kombdi vade is a dish native to the Konkan region in the Indian state of Maharashtra. The dish consists of a traditional chicken curry (including chicken pieces with bones), vade (fluffy fried dumplings made of rice flour, and occasionally of wheat and Ragi flour), onions, lemon juice and solkadhi (a gravy made from coconut milk). This dish is majorly prepared on “Gatari” “Gauri Ovase”, “Dev Diwali” and “Shimga” in Raigad, Ratnagiri and Sindhudurg districts of Konkan. Generally this dish is available throughout the year especially in the coastal area of Maharashtra including Mumbai.

INGREDIENTS FOR VADE FLOUR WHICH YOU CAN STORE AND USE WHEN REQUIRED

  • 500 grams rice flour
  • 50 grams – urad dal
  • 50 grams – chana dal
  • 50 grams –  saunf / fennel seeds ( badishep)
  • Warm or normal  water to knead the dough

PREPARATION OF FLOUR

  1. Wipe the dals with cloth.
  2. Grind together urad dal + chana dal + fennel seeds into powder .
  3. The powder would be a bit grainy – it is ok .
  4. Now mix this with the rice flour well .
  5. Store it in an airtight container and use when ever required .

METHOD FOR MAKING VADE

Take 2 cups of prepared vade flour in a mixing bowl .

Add 1/4 tsp turmeric + salt as per taste.

Now gradually add warm water and start mixing  .

Knead it into a soft and stiff dough.

Cover and keep aside for 15 mins .

Heat oil in a pan .

Dip your hands in water and take a small portion of dough ..

Roll it into a ball   ,place it on a plastic sheet  and pat it to form a circle.

Now make a hole in the middle using fingers .[ you can also make with out hole just like pooris ]

Slide it into hot oil .

Fry it on medium flame by flipping on both sides .

Fry till golden brown .

Drain and remove on absorbent paper .

Maharashtrian vades / instant kombdi vades are ready to be served with spicy gravies.

NOTES

  1. We can also add spices like black pepper / jeera / coriander seeds / methi seeds .
  2. These vades are a bit crispy as we have ground the urad dal in he mixie.
  3. Some add wheat flour /jowar flour / besan etc also .In this way we can make multigrain vade also .
