LAMB BONE CURRY [ SouthIndian style ]

INGREDIENTS

  • Mutton with bones [ leg or chest portion ] – 500 gms
  • Oil – 1 tbsp
  • Onion finely chopped – 1
  • Tomato finely chopped – 1 big
  • Ginger garlic paste – 1 tbsp
  • Red chilli pwdr – 1 or 11/2 tsp  or as per taste
  • Coriander pwdr – 3 tsp
  • Turmeric – ½ tsp
  • Jeera pwdr – ½ tsp
  • Fennel seeds [ saunf pwdr ] – 1 tsp
  • Garam masala pwdr – 1 tsp
  • Fresh coconut – ½ cup
  • Salt
  • Finely chopped coriander leaves for garnish

PREPARATION

  1. Clean , wash ,rinse and soak the mutton in water for 10 mins. This  helps to discard the excess blood and meaty smell from the mutton .
  2. After 10 mins ,drain off the excess water and transfer to a cooker .
  3. Add ½ cup water + little salt .
  4. Cook upto first whistle on medium flame . After first whistle , lower the flame to lowestand cook for 12 to 15 mins .
  5. *** I usually cook for 10 mins ,but for the bones to soften I overcooked the bones to get the best out of it .
  6. Grind the coconut into fine paste by adding ¼ cup  water .

Heat oil in a pan ,add onion and fry till light brown .

Add ginger garlic paste and fry till raw smell leaves .

Add tomato + salt and cook till oil separates .

Add all the masala pwdrs and fry for few secs.

Add the cooked meat and mix well .

Add the coconut paste and mix well.

Adjust water as per the consistecncy you want .

Adjust salt if required ,

Allow it to boil .Once it starts boiling ,simmer on low flame for 2 to 3 mins.

Off the flame and garnish with coriander leaves .

Goes well with rice  /idli /dosa .

NOTES

  1. Adjust masala as per taste .
  2. Coconut gives a consistency to the gravy .

Next time you chew all the flesh off the bones of your meat, don’t just discard them ,but also relish the bones.
