MANGO PICKLE MADE WITH READYMADE MASALA

MANGO PICKLE

INGREDIENTS

  • Mango cubes – 1 kg [raw hard mangoes ]
  • Oil – ½ kg
  • Asafoetida – 1 tbsp
  • Turmeric – 1 tsp
  • Suhana or Bedekar achar masala – [ 100 gms ]
  • Salt to taste

PREPARATION

  1. Wash the mangoes and wipe it well. See that there is no moisture .
  2. Chop them into medium size pieces.

METHOD

Take oil in a pan /kadai and heat it till very hot. [ a bit smoky ,but be careful ]

Off the flame.

When the oil cools down to little normal hot temperature , add asafoetida + turmeric + salt + ready masala  .

Mix well.

When the oil comes down to room temperature ,then add the raw mango and mix very well.

Store in a sterilized glass bottle and use.

*While storing , layer the mangoes at the bottom and then top it with oil.

If you want ,you can keep the bottle under sun for 10  to 15 days for marination .

NOTE

  1. Suhana pickle masala comes in different size pouch depending on the weight of the mango  .Do check before buying .
  2. The mangoes should be firm and hard and not soft .
  3. Use mangoes that are sour and while cutting ,see that the inner shell cover is intact.
  4. Use a dry soon each time ,you use the pickle.
  5. We can use sesame oil or mustard oil or regular oil .

HOW TO MAKE SIMPLE PICKLE MASALA AT HOME FOR ½ KG MANGO

INGREDIENTS

  • Split yellow mustard seeds- 50 gms
  • Red Kashmiri chilli pwdr –  150 gms
  • Methi seeds /fenugreek seeds – 1 tsp

Dry roast the fenugreek seeds on low flame till aromatic .

The colour should not change. Also it should not burn , else it will give a burnt bitter taste.

Cool the roasted methi seeds and blend it into fine pwdr .

Now make a mixture of methi seeds pwdr + red chilli pwdr + split mustard seed and mix well. Your pickle masala pwdr is ready to use .
