Mango sheera / kesari
MANGO SHEERA / KESARI
INGREDIENTS
- Rava – 1 cup
- Mango pulp – 1cup
- Sugar – 3/4 or 1 cup or as per taste
- Water – 2 cup
- Cardamom pwdr – 1/4 tsp
- Ghee – 5 or 6 tbsp
- Cashew nuts – few
PREPARATION
- Use sweet mangoes .Peel the mango and chop it into small pieces .Blend the mango into fine puree .
- Heat 2 tbsp ghee in a pan and add the cashews . Fry the cashews till golden and remove.
- In the same pan add the rava and fry on medium flame till aromatic and colour should not change .Remove and keep aside .
METHOD
In the same pan keep the water to boil on medium flame .
Once it starts boiling ,add the puree and mix well .
Lower the flame and add the roasted rava and mix well ,so that there are no lumps.
Cover and cook till the rava becomes soft .
Now add sugar + cardamom and mix well.
The sugar will melt and the mixture will loosen.
Stir and cook till it thickens.
Finally add the remaining ghee and mix well .
Stir for few seconds till the mixture starts leaving the sides of the pan .
Off the flame and add the fried cashews and mix well .
Kesari / sheera is ready to serve either hot or at room temperature.
NOTES
- Authentic kesari recipes ask for equal quantity of rava + sugar + ghee. I have added less ghee.
- Use sweet mangoes without fibres. If the mangoes have fibre then please strain the pulp and discard the fibres.
- Sometimes the mango may not have the the flavour /essence [smell ] of it ,in that case add few drops of mango essence.
- Use sweet mango else the sheera will be sour / tangy in taste .
- You can add few strands of saffron .
- You can also use store bought mango pulp .
- You can also add few small pieces of mango.
