Mango sheera / kesari

INGREDIENTS

  • Rava – 1 cup
  • Mango pulp – 1cup
  • Sugar – 3/4 or 1 cup or as per taste
  • Water – 2 cup
  • Cardamom pwdr – 1/4 tsp
  • Ghee – 5 or 6 tbsp
  • Cashew nuts – few

PREPARATION

  1. Use sweet mangoes .Peel the mango and chop it into small pieces .Blend the mango into fine puree .
  2. Heat 2 tbsp ghee in a pan and add the cashews . Fry the cashews till golden and remove.
  3. In the same pan add the rava and fry on medium flame till aromatic and colour should not change .Remove and keep aside .

METHOD

In the same pan keep the water to boil on medium flame .

Once it starts boiling ,add the puree and mix well .

Lower the flame  and add the roasted rava and mix well ,so that there are no lumps.

Cover and cook till the rava becomes soft .

Now add sugar + cardamom and mix well.

The sugar will melt and the mixture will loosen.

Stir and cook till it thickens.

Finally add the remaining ghee and mix well .

Stir for few seconds till the mixture starts leaving the sides of the pan .

Off the flame and add the fried cashews and mix well .

Kesari / sheera is ready to serve either hot or at room temperature.

NOTES

  1. Authentic kesari recipes ask for equal quantity of rava + sugar + ghee. I have added less ghee.
  2. Use sweet mangoes without fibres. If the mangoes have fibre then please strain the pulp and discard the fibres.
  3. Sometimes the mango may not have the the flavour /essence [smell ] of it ,in that case add few drops of mango essence.
  4. Use sweet mango else the sheera will be sour / tangy in taste .
  5. You can add few strands of saffron .
  6. You can also use store bought mango pulp .
  7. You can also add few small pieces of mango.
