Mushroom pulao
MUSHROOM PULAO
INGREDIENTS
- Basmati rice – 1 cup
- Mushroom – 1 pkt
- Oil + ghee – 1 1/2 tbsp
- Onion thinly sliced – 1
- Green chilli slitted – 3 or 4 or per taste
- Ginger garlic paste – 2 tsp
- Few whole garam masala – jeera/cardamom /clove/cinnamom /bay leaf /saunf star anise
- Garam masala pwdr – 1/4 tsp [ optional ]
- Salt to taste
- Sugar – 1/2 tsp [optional ]
- Finely chopped mint + coriander leaves – 1/2 cup
PREPARATION
- Clean ,wash ,rinse and soak the rice for 30 mins.
- Clean ,wash rinse and wipe the mushroom and slice it .
METHOD
Heat oil + ghee and add the whole garam masala and let it splutter .
Add the onions + green chilli and fry till brown .
Add ginger garlic paste and fry till raw smell leaves .
Add the mushroom and cook till the mushrooms are done .[ 3 to 4 mins ]
Add coriander + mint leaves and fry till the leaves shrinks.
Add garam masala + sugar + salt as required and mix .
Drain and add the rice .
Mix well and add 2 1/4 cup water .
Check salt .
Cover and cook on medium flame .
Once the water reaches the rice level , place a tava below .
Reduce the flame to lowest and cook on dum for 10 mins.
Allow it to sit for 5 mins.
Open and fluff the rice .
Serve hot with any side dish / raita /papad/pickle etc
NOTES
- I use 2 1/4 cup water for 1 cup rice , if you take 2 cup the rice after sometimes becomes hard.
- For yellow colour pulao add little turmeric .
- You can also add green peas .
- You can also add 1 or 2 tsp of lemon juice .I forgot to add .
