LEHSUNI /LAHSOONI PANEER

Lehsuni / lahsooni paneer

INGREDIENTS
• Fresh paneer cubes – 250 gms
• Oil – 1 1/2 tbsp
• Ghee – 1 tbsp
• Onion roughly chopped -1 big
• Ginger garlic paste – 1 tbsp
• Fresh curd – 6 tbsp [ not sour ]
• Maida / corn flour / besan – 1 tsp [thickening agent – optional ]
• Red chilli pwdr – 1 tsp or as per taste
• Coriander pwdr – 2 tsp
• Turmeric pwdr – 1/4 tsp
• Sugar – 3/4 tsp
• Kitchen king masala pwdr / Garam masala pwdr – 1/2 tsp
• Fresh cream – 3 or 4 tbsp
• Kasoori methi pwdr – 1/2 tsp OR 2 tbsp whole kasoori methi
• Lemon juice – 1 or 2 tsp [ optional ]
• Very finely minced garlic – 2 tbsp

PREPARATION
1. Make a fine paste of onion + ginger garlic paste .
2. Blend together curd and flour.

METHOD
Heat oil in a pan ,add the onion paste and fry till oil separates,
Add chiili pwdr + turmeric + coriander pwdr + garam masala pwdr and fry.
Lower the flame and add the curd mixture , mix well and cook for a minute.
Add 1 or 1 1/4 cup of water + salt + sugar , mix well and cook for a minute .
Add the paneer, mix well and simmer on low flame for a minute .
Add the kasoori methi pwdr + fresh cream and mix well.
In a small pan heat the ghee and add the garlic.
Fry till light brown .[ don’t burn it ]
Pour it over the gravy , mix and cover immediately.
Serve hot with any rice varieties or Indian bread .
While serving ,you can drizzle few drops of lemon juice.
