NO ONION NO GARLIC CHOLE / JAIN CHOLE

No onion and no garlic jain chole recipe

INGREDIENTS

  • 11/2 cup –  kabuli Chana 
  • 1 cup – coriander leaves… 
  • 2 –  green chillies 
  • 1 tbsp – jeera 
  • 1.5 tsp – Ajwain 
  • 1 tsp – haldi 
  • 1 tsp – garam masala 
  • 1 tsp – aamchur powder 
  • 1.5 tsp – black pepper powder 
  • 1 tsp – red chili powder 
  • 1 tomato pureed 
  • 1 tbsp tamarind soak in 1/4 cup of warm water and extract pulp
  • Salt to taste 
  • Green chillies to fry (optional)

Soak the Chana overnight. 

Wash in several water and pressure cook for 5-6 whistles with salt. 

TIP – Pressure cook on medium flame upto 5 mins , then lower the flame to lowest and cook for 8 to 10 mins .

Let the pressure release.

Remove 1/3 cup of boiled chole and pound in mortar and pestle OR grind in mixie jar . 

Grind coarse paste of fresh coriander leaves and 2 green chillies. 

Take all dry masalas in mixie jar add little salt and make fine powder. 

Heat 2-3 tbsp of oil in a pan on low flame .

Add masala powder and fry on very low flame until fragrant. 

  • Be careful ,don’t burn the masala pwdrs.

Add coriander paste and stir fry  for 2 – 3 mins. 

Add Tomato puree and cook for couple of minutes. 

Add chole paste and mix well .Stir and cook for a min .

Add boiled chhole + tamarind Pulp + enough water for gravy and stir nicely. 

Roll boil .

Simmer the flame and cook for 4-5 mins on low flame.
