Prawns in butter lemon sauce
PRAWNS IN BUTTER LEMON SAUCE

INGREDIENTS:
- 250 gms prawns deveined (med size)
- 1 tbsp butter + 1 tbsp olive oil
- 1 tbsp garlic ( very finely minced )
- 2 tsp lemon juice
- 1/4 tsp black pepper
- 1 tsp mixed herbs
- 1/4 tsp chilli flakes
- Salt to taste
- 1 tbsp cornflour mixed in 1/2 cup of water
- 1 cup water or stock
- Chopped Coriander leaves for garnish
METHOD:
Heat butter and oil together.
Add garlicand sauté for few seconds.[ colour should not change – don’t burn ]
Add prawns + salt ,mix well and cook on medium heat till done by stirring or tossing in between.
Do not cover, while cooking the prawns .
The prawns sweat and cook in its own juice .
Once all moisture evaporates , add pepper , herbs ,chiili flakes and fry .
Add water / stock + cornflour slurry and let it boil ,till it thickens.
Once the sauce thickens and becomes glossy / shiny off the flame .
Drizzle all over the lemon juice and mix well.
Garnish with coriander leaves.
Serve hot with plain or flavoured rice or just have it has a starter .
VARIATION
If you avoid water and corn flour slourry ,you wll have a yummy dry prawns starter – butter garlic prawns .
I have added a pinch of turmeric .
