MUTTON TIKKA / MUTTON BOTI KEBAB
INGREDIENTS
PREPARATION
Take the mutton + 2 tbsp curd + salt + 4 tbsp water in a cooker .
Cook on medium flame till first whistle , after the first whistle lower the flame to lowest and cook for 10 mins.
Once the pressure releases, open the cooker.
If there is any moisture cook on high flame till it dries up .
Allow it to cool .

METHOD
Make a marination paste with all ingredients except oil ,butter and mutton .
Mix well with hands .
Taste and check and adjust if anything need to be added.
Add the cooked mutton and mix well .
Keep aside for 15 mins.
Heat oil in a pan on medium flame.
Arrange the marinated mutton .
Cook for 1 min .
Flip and cook on other side also for 1 min.
Now increase the flame and stir fry for 2 to 3 mins and off the flame.
Once done remove and serve with any dip / chutney / sauce /onion / lemon rings etc
Can be used for making rolls / frankie or topped on pizza or stuffed in breads or just serve as starters .
We can use these mutton tikkas and make mutton tikka masala gravy .
