Sabudhana waffles /oil free sabudhana vada
SABUDHANA WAFFLES /OIL FREE SABUDHANA VADA
INGREDIENTS
- 3 potatoes [ boiled and mashed well ]
- 1 cup peppercorn size sabudana [ soaked for minimum 5 hrs or over night]
- 1/2 cup roasted peanut [ remove the skin and blend into coarse powder]
- 2 green chillies finely chopped.
- ½ cup finely chopped coriander leaves.
- Salt as per taste
- Oil for deep fry.
PREPARATION
- Clean ,wash ,rinse and soak the sabudana .[ **** water level till it is immersed ,not more ]
- Pressure cook the potatoes ,peel and mash it .
- Blend the skinless roasted peanut .
METHOD
Drain off the water completely from the soaked sabudana.Keep it in the strainer for sometime .It should be dry.
Take the mashed potatoes in a big plate.
Add the sabudana, peanut pwdr, chilli, coriander leaves and salt ,
Mix and knead well like soft dough .
Heat the waffle maker .
Take hand full of the mixture , roll it well and flatten it.
Spray the waffle with oil .
Place the flatten mixture on the hot waffle plate and again flatten it a bit .
Close the waffle maker and toast for 5 – 8 minutes .
If it is not done the toast it again till golden colour .
Keep checking after 5 mins so that it does not burn.
Carefully remove the waffle .
Serve it with green chutney / sauce / dips /sweet curd .
VARIATION – You can use idli / dosa batter also for making waffles – Pour the batter top it with onion + coriander leaves + grated carrot etc
NOTES / TIPS
- The sabudana has to be soaked well.There should be no moisture in it.The centre of the sago should be soft.
- Don’t overcook the potatoes.The quantity of sabudana should be more than the mashed potato.
- You can add 1 tbsp of rice flour for to the mixture or dust the vadas with rice flour before frying for crispy vadas..
- While making for fast instead of regular salt ,use rock salt/sendha salt.You can use arrowroot pwdr or kuttu ke atta [buckwheat flour].
- After flattening the vadas you can dust it with corn flour. Do not stir the vada for 1 minute after dropping them in the oil or it may crack.
- You can also add 1 tsp of lemon juice ,ginger and sugar.
- You can also add spice of your choice.
