Sindhi sai bhaji
SINDHI SAI BHAJI [ sai means green – bhaji means veges ]
INGREDIENTS
- Palak leaves – 1 bunch
- Khatta leaves – 1 small bunch
- Chana dal – 1/4 cup
- Onion finely chopped – 1 big chopped
- Tomatoes finely chopped – 2
- Green chilli finely chopped – 1
- Ginger garlic paste – 1 1/2 tsp
- Potato – 1
- Green peas – 1/4 cup
- Carrot cubes – 1/4 cup
- Dudhi chopped – 1/2 cup
- Brinjal – 1
- Jeera – 1 tsp
- Red chilli pwdr – 1 tsp
- Coriander pdr – 1 tsp
- Garam masala pwdr – 1/4 tsp
- Turmeric – 1/4 tsp
- Oil – 1 tbsp
- Ghee – 2 tbsp
- Crushed garlic – 1 tbsp
- Asafoetida – generous pinch
- Kasoori methi pwdr – 1 tsp
- Finely chopped coriander leaves – 2 tbsp for garnish
PREPARATION
- Pluck the leaves ,clean ,wash rinse in several waters and drain the excess water .
- Chop the veges roughly into small pieces .
- Clean wash and soak the dal for 30 mins .
METHOD
Heat oil in cooker ,add onions + green chilli and fry till translucent .
Add ginger garlic paste and fry till raw smell leaves .
Add tomatoes and fry till it softens .
Add all the veges and stir fry for a minute .
Add chilli pwdr + coriander pwdr + garam masala pwdr + turmeric + salt and fry for few seconds .
Now add the soaked dal and mix well .
Now add the chopped khatta leaves + palak and mix well.
Stir fry till the leaves shrink .
Add 1/2 cup water and pressure cook upto 4 or 5 whistles .
Once the pressure releases ,add kasuri methi pwdr and mash it with wooden masher or blend for few seconds to a coarse mixture .
**** either you can mash it completely till you don’t see the dal or just blend lightly to a coarse mixture where you can see the dal also .
Heat ghee in another pan .
Add jeera + asafoetida .
Add thecrushed garlic and fry till brown .[ dont burn it ]
Add the mashed mixture and mix well .
Off the flame .
Serve hot with bugha chawal /sindhi biryani and koki .
NOTES
- You can take a mixture of 3 dals – chana dal green split moong dal + urad dal .
- If you don’t get khatta leaves , add 1 more tomato .
- Instead of khatta leaves ,you can add 1 tbsp of tamarind juice .
- You can also add other veges like carrot / suran / ladies finger etc
- Some add dill leaves /methi leaves also .
- Instead of methi leaves ,I have added kasoori methi pwdr which enhances the flavour .
- Don’t make it watery ,it has to be thick .
- You can also make plain sai bhaji without veges .
