Zafrani pulao / Saffron rice
ZAFRANI PULAO / SAFFRON RICE

INGREDIENTS
- Basmati rice [ aged / good quality ] – 1 cup
- Ghee – 1 tbsp
- Laung / cloves – 2
- Elaichi /cardamom – 2
- Cinnamom /dalchini – a small piece
- Tejpatta /bayleaf – 1
- Fried onions / birista – ¼ cup for garnish
- Finely chopped mint leaves + coriander leaves – 2 tbsp for garnish
- Fried dry fruits – few for garnish
- Water – 1 ¾ cup
- Salt to taste
- Saffron – ¼ tsp soaked in 2 tbsp water or milk
PREPARATION
Clean ,wash ,rinse and soak the rice for 40 – 45 mins.
METHOD
Drain completely the excess water from the soaked rice .
Take rice + clove + cinnamon + bay leaf + cardamom + ghee + salt in a heavy bottom pan.
Give a stir and keep on medium flame .
Add the water .
Allow it to boil .
Stir it .
Now cook till the rice is cooked till soft and complete water dries up .
Now pour the saffron mixrure all over .
Lower the flame to lowest and cook till the rice is completely done .
Off the flame ,keep closed for few minutes.
Open and fluff it with a fork .
Transfer to a serving plate /bowl and garnish .
Serve with any veg or non veg side dish.
