SITAPHAL RABDI

Rabri is a sweet, condensed-milk-based dish, originating from the Indian subcontinent , made by boiling milk on low heat for a long time until it becomes dense and changes its colour to off-white or pale yellow. It is chilled and served as dessert.
Custard Apple Rabdi or Sitaphal Rabdi is a traditional Indian dessert made with fresh custard apple.
This fruit is a storehouse of anti-oxidants and nutrients and lends its own sweetness and taste to this dessert.
INGREDIENTS

METHOD
Pour 1 litre milk in a heavy bottom pan and bring it to a rolling boil.
add 1 tsp curd and mix well .
Lower the heat and let it simmer till a thick layer of cream forms on its surface.
Collect the cream on the sides of the pan and simmer the milk further.
Add 3 to 4 tbsp sugar or condensed milk + ½ tsp cardamom pwdr and mix well .
Keep shifting the thick layer of milk to the edge of the pan as it is formed .
Cook till the milk is reduced 1/3 .
Let it come to room temperature .
Add in the custard apple pulp, slivered almonds, pistachios and mix gently.
Refrigerate for 2 to 3 hours before serving.
Serve Sitaphal Rabdi chilled .
