Dhudhi ki sabji
BOTTLE GOURD PORIYAL / DUDHI WITH CHANA DAL
INGREDIENTS
- Bottle gourd – 250 gms
- Chana dal – ¼ cup
- Oil – 1 or ½ tbsp.
- Mustard seeds – 1 tsp
- Onion finely chopped – 1
- Green chilly chopped – 2 or 3 or as per taste
- Curry leaves – few
- Turmeric pwdr – ¼ tsp
- Salt as per taste
- Freshly grated coconut for garnish – 4 tbsp.
PREPARATION .
- Peel the outer covering of the gourd using the peeler .Chop into small pieces .
- Soak the chana dal for min 1 hr or more or over night .
METHOD
Heat oil in a pan and add the mustard seeds , allow it to crackle.
Add onion + curry leaves + chilli and fry till translucent. [ don’t brown ]
Add the soaked dal and mix well .
Sprinkle little water and cook for FEW mins till it softens a bit .
Now add the chopped gourd and cover the chana dal . [ don’t mix ]
Cover and cook so that the gourd sweats [ leaves water ] and the chana dal gets cooked .
Remove the lid and mix well .
Sprinkle little water if required .
Add salt and turmeric pwdr and mix well .
Cook till the gourd + dal is cooked .
Once done [ complete water evaporates and you see oil ] , mix in the coconut and off the flame.
Serve as a side dish for rice or chappati.
NOTES.
- Don’t over cook the dal , it has to be whole ,but very soft.
- You can avoid dal and make without it.
- Instead of chana dal you can add 1 tbsp of moong dal. [ no need of soaking ]
- You can pressure cook the chana dal and add it.
- I like to chop the vegetables into small pieces as it cooks fast and kids don’t make any fuss.
- Many veges like cabbage , tendli , beans ,parwal ,padwal,tinda etc can be made in same process with chana dal.
- Instead of green chilli ,you can use red chilli.
- You can soak the dal in hot water to reduce soaking time or even microwave it .
- Instead of adding water , you can put the water on top of the lid , cover and then cook.
