SWEET CORN PAKODA / SWEET CORN CRISPY FRITTERS 

INGREDIENTS

  • Sweet corn – 2 cup
  • Besan – 2 ½ tbsp
  • Rice flour – 2 ½ tbsp
  • Garam masala – ½ tsp
  • Finely chopped green chilli – 1
  • Onion sliced lengthwise – 1
  • Finely chopped coriander leaves – 3 tbsp
  • Chilli pwdr – ½ tsp or as per taste
  • Chaat masala – ½ tsp
  • Amchur pwdr – a generous pinch
  • Salt as per taste
  • Oil for deep fry or shallow fry

PREPARATION

Pulse grind the corn in a blender into a coarse mixture.

METHOD

Mix all the ingredients except oil .

Knead it like a dough.

Don’t add water , just sprinkle few drops if required  or wet your hands and mix well.

The dough should be tight and not loose or watery.

Heat oil in a deep pan .

When the oil is hot start dropping the mixture in small batches. [just don’t drop try to spread the mixture with fingers while dropping]

Fry on both the sides till golden brown.[don’t burn it]

Once done , remove on absorbent paper.

Serve hot with green chutney + sweet chutney.

NOTES

  1. Avoid adding water for crispier pakoras.
  2. Slice the onion lengthwise for crispy pakoras.
  3. Instead of red chilli pwdr you can add green chillies.
  4. You can add curry leaves.
  5. For more flavour you can add crushed fennels seeds.
  6. You can even add roasted and crushed whole coriander seeds.
  7. Instead of coriander leaves for variation you can try mint leaves.
