BADAM BURFI / KATLI

INGREDIENTS
👉2 cups almonds
👉6 cup hot water
👉2 cup sugar
👉1 cup water
👉2 tbsp ghee
METHOD
👉In a large bowl soak almonds in hot water for an hour.
👉Peel the skin from badam and keep aside.
👉Pat dry the badam making sure there is no moisture present.
👉Transfer the badam into a small blender and blend to coarse powder, keep aside.
👉meanwhile, prepare the sugar syrup by adding 2 cup sugar and 1 cup water.
👉Keeping the flame on low, stir continuously.Boil the sugar syrup till it forms one string consistency.
👉Now add the prepared almond powder,
mix continuously keeping flame on low to medium.
Now add ghee
👉 Mix continuously till the mixture starts to leave the pan.
👉Switch off the gas and transfer the material in a pan, and allow to cool for 5 minutes.
👉Now make smooth dough and put it in a clean polythene and roll with a rolling-pin.
👉Badam Burfi is now ready
👉Cut in square pieces or according shape of your choice.
