ROASTED TOMATO BHARTA / BHUNE TAMATAR KA BHARTA

Bharta are North Indian (Punjabi) dishes where the main ingredient is roasted and then pureed with spices. The flavours are intensified by the roasting and the resulting dish is spicy and tangy. 

Bharta is a dish from the Indian subcontinent. Baharta is a part of the cuisine of some nation states of the Indian subcontinent. It is a vegetarian dish that is prepared by mincing eggplant or tomato  that is grilled over charcoal or direct fire. This infuses the dish with a smoky flavour. 

Bhune tamatar ka bharta

INGREDIENTS

  • tomatoes – 4 large and ripen
  • garlic- 1 pod
  • green chilli – 4 or as per taste
  • finely chopped onion – 1 medium size
  • finely chopped coriander leaves – 2 tbsp
  • salt to taste
  • oil – 1 tsp
  • lemon juice if required .

METHOD

Roast 4 large red ripen tomatoes , 1pod of garlic and 4 green chillies on stove flame directly by putting on a jaali (Like baigan bharta),

Remove the skin of tomatoes and garlic, in a mixer jar add chopped roasted tomatoes, garlic and chillies and run on pulse beat for two three times,

Don’t make fine paste, it should be of coarse texture .

Transfer to a bowl and add salt to taste,

Add 1 medium size finely  chopped onion + 2 tbsp chopped coriander leaves  + 1 teaspoon oil , mix well .

If tomatoes are not tangy add little lemon juice, mix well and serve with daal rice, aalu paratha, nachos, papad etc, tastes yummy ( tastes best if made with desi tomatoes)

NOTES.

  1. To test whether the tomato is roasted well ,try to poke a knife ,  if the knife slides in easily ,it means it is done .
  2. Roasting time depends on the size of the tomato.
  3. Roasting on charcoal flame will enhance the flavour.
  4. You can smoke it after it is done also with a burnt charcoal.
  5. You can prick the tomato from all sides before roasting it.
  6. Y not sprinkle chaat masala in the end.
