Drumstick soup
DRUMSTICK SOUP

INGREDIENTS
- Tender drumsticks – 2
- Butter – 1 tbsp
- Oil – 1/4 tsp [optional – adding so that butter doesnt burn ]
- Finely minced garlic – 1 tsp
- Finely chopped onion – 1/4 cup
- Salt to taste
- Pepper to taste
- Finely chopped coriander leaves – 1 tbsp
- Corn flour slurry – 1 tbsp corn flour mixed wth 2 tbsp water
PREPARATION
Wash the drumstick and chop it into finger size .
METHOD
Heat butter + oil in a cooker add garlic and fry till brown . [dont burn ]
Add onions and fry till brown .
Add 3 cups of water + salt .
Add the drumstick and pressure cook upto 3 or 4 whistles.
Allow the pressure to release .
Drain the soup through a soup strainer and collect the soup in another pan .
Scoop of the pulp from the drumstick and strain the pulp too .
Boil the collected soup on medium heat .
Once it starts boiling add the cornflour slurry and cook for 1 min .
Off the flame and garnish with coriander leaves .
While serving adjust pepper pwdr .
** To make it rich you can add fresh cream or grated cheese .
