Dudhi gravy
DUDHI CURRY /GRAVY
INGREDIENTS
- Dudhi – a medium size
- Tomato – 2 big
- Potato – 1 small
- Onion – 1
- Panch phoron masala – 1 1/2 tsp [methi dana , kalonji ,jeera, rai and saunf in equal parts]
- Oil – 1 or 2 tbsp
- Curry leaves – few
- Ginger garlic paste – 1 tsp
- Red chilli pwdr – 1 tsp
- Turmeric – 1/2 tsp
- Coriander pwdr – 2 tsp
- Kitchen king masala /garam masala – 3/4 tsp
- Salt to taste
- Finely chopped coriander leaves to garnish
PREPARATION
- Peel the dudhi and chop it into small cubes and keep it immersed in water .
- Puree the tomato .
METHOD
Heat oil in a cooker and add the panch phoron and fry .[don’t burn it ]
Add the onions + curry leaves and fry till light brown .
Add ginger garlic paste and fry till raw smell leaves .
Add tomato puree + salt and fry till oil separates.
Add chilli pwdr + turmeric pwdr + kitchen king masala + coriander pwdr and fry .
Now add the potatoes and mix well.
Add the dudhi and mix well.
Stir and cook for 2 mins.
Add 1 cup water and pressure cook upto 4 whistles.
We have to overcook till the potatoes ,get mushy .
*** we are adding potato to give a gravy like consisitency instead of using any dal.
Once the pressure releases ,open the cooker , mix well and transfer to serving bowl.
Garnish with finely chopped coriander leaves .
Finally you can also add hot ghee into it . [optional ]
Serve with Indian bread items or rice with any side dish .
