Eggless coffee cake
EGGLESS COFFEE CAKE by Khushi Udhani
INGREDIENTS [ 1 cup – 200 ml ]
- Maida – 1 1 /3 cup
- Corn flour – 2 tsp
- Baking pwdr – 1 ½ tsp
- Baking soda -1/4 tsp
- Water – ½ cup
- Instant coffee pwdr – 2 tbsp
- Butter – 3 tbsp
- Powdered sugar – 1 cup
- Hot Milk – 1 cup
- Vanilla essence – 1 tsp
PREPARATION
- Mix maida + baking pwdr well and sieve it 2 – 3 times.
- Boil ½ cup water and add instant coffee pwdr .Boil it till it reduces abit to get a strong decotion. [ we need ¼ cup of decotion ]
- Grease and dust the baking tin.
- Keep all things ready before you start .
METHOD
Take hot milk in a mixing bowl
Add butter + sugar + vanilla essence and whisk well.
Make a mixture of cornflour + baking soda + 1 tbsp water and make a smooth paste. Add this to the above mixture and mix well. [ refer to the video below ]
Pour ¼ cup of coffee decotion .
Again beat the mixture well.
**** Preheat the oven at 180 * .
Now slowly add the flour mixture and mix well with a spatula .[ no beating after adding flour ]
Mix it into a smooth batter without any lumps .Batter should not be very thick or very thin .[ medium consistency ]
Pour the batter in the tin .
Bake it for 30 – mins 40 at 180 *. [ check after 30 mins by inserting a tooth pick ]
Bake it till the cake is done – tooth pick comes clean .
Once done allow the cake to cool down.
Run a knife around the tin and demould it on a plate .
Once it is completely cooled ,you can do the icing or serve it .
