EGGLESS PARSI MAWA CAKE / IRANI MAWA CAKE

Decadent, delicious and arguably the butteriest delight, mawa cake is a must-​have.

Mawa cake is a moist, dense, decadent and delicious Indian cake. It is not overly sweet and makes for a perfect accompaniment along with your tea or coffee.

This eggless mawa cake is a cardamom-spiced eggless buttery cake with a caramelized milky flavor. Made with mawa or khoya.

Traditionally cake recipes were not native to indian cuisine and is only brought to india by the migrating community. Mawa cake is one such popular recipe, which is typically found in the parsi hotels. Unlike other cake recipes, mava cake is served as a snack with a hot beverage.

INGREDIENTS [ 1 Cup = 250 ml, 1 tsp = 5 ml . All ingredients should be at room temperature ]

  • 1 ½   cups all-purpose flour
  • 1 tsp baking powder
  • ½  tsp baking soda
  • ½  tsp elaichi / cardamom powder
  • ½  cup butter
  • 1 cup sugar
  • ½ cup curd OR 2  beaten eggs
  • 1 cup grated or crumbled mawa 100 grams
  • ½  cup milk
  • 3 tbsp slivered pistachios or any other nuts
  • Grease an 8-inch cake tin and lay a parchment paper at bottom

METHOD

In a medium mixing bowl, sieve flour +  baking powder + baking soda + cardamom powder.

Dry mixture is ready . Transfer to a mixing bowl .

Preheat the oven to 180°C .

Beat the butter and sugar on until light and creamy, scraping down in between in a mixie . 

Add grated mawa,  and beat until light and fluffy.

Add curd + milk and beat .

Pour this wet mixture into the flour mixture .

Mix well till all combine well and there is no lump .

Never over beat any cake batter .

Transfer the batter to the prepared baking tin .Tap it gently .

Sprinkle the slivered pistachios all over on top of the batter.

Bake in the middle rack, for about 40 – 45 minutes or until a toothpick inserted in the center of the cake comes out clean.

Do not overbake or else you will end up with a dry cake.

Cool the cake on a rack in the tin for 15 minutes, then remove from the tin and cool

Slice it when the cake completely cools down .

It is generally served as a snack with evening tea or as a morning breakfast. it is very filling with mild sweetness.

NOTES

Homemade mawa  – use /2 cup milk powder = ¼ cup milk + 1 tsp butter and make home made mava at home  – INSTANT HOMEMADE MAWA / KHOYA FROM MILK POWDER
