LOTUS STEM WITH POTATO CURRY / SEYAL BHEE PATATA

Edible lotus root is known for its crunchy texture and slightly sweet taste. It is a versatile vegetable.. It is more commonly known as kamal kakri in India, and is a woody, edible root that can grow as long as four ft .
It is rich in dietary fiber, potassium, iron and vitamins B and C. Considering they have these important nutrients and minerals, lotus roots can be called as one of the healthiest foods.
Kamal kakdi has high amounts of dietary fiber, which helps boost digestion .
The presence of significant levels of potassium in lotus roots ensures a balance between fluids in the body and prevents excessive sodium from affecting the bloodstream. It relaxes the blood vessels and further prevents contraction and rigidity, increasing blood circulation
The excessive potassium content in lotus roots absorbs the excess sodium and increases the production of urine.
The stem of the lotus plant is full of minerals and nutrients — such as vitamin C — that are important for your body’s daily function. One of these minerals is potassium, which helps regulate blood pressure. Boil lotus roots for 10 minutes and then eat them to receive a healthy dose of nutrients.
Lotus roots are usually sliced crosswise to reveal their attractive pattern of holes. They are traditionally added to soups and stews or simply stir-fried, as well as braised in soy sauce. They can also be thinly sliced and added raw to salads. Another favorite way of enjoying them is deep-fried into chips.
LOTUS STEM / ROOT
Buy lotus stem of good quality and fresh .It should be thicker .While slicing it should be soft . When you slice it should be white from inside and not pale or muddy. Try to select a short, fat lotus root that is heavy and firm, with a vibrant brownish color. Try to avoid any root with black spots or bruises on the rind.
INGREDIENTS
- Lotus stem of good quality– 10 roundels
- Potato medium cubes – 1 big
- Green peas – ¼ cup [optional ]
- Onion – 2 big finely chopped
- Green chilli – 1
- Tomato – 2 small finely chopped
- Ginger garlic paste – 1 tsp
- Red chilli powder – 1 tsp or as per taste
- Coriander pwdr – 1 tsp
- Garam masala pwdr – ½ tsp
- Jeera pwdr – ¼
- Turmeric – ¼ tsp
- Fresh coriander leaves for garnish
- Salt to taste
PREPARATION
Soak the stem in water for 20 to 30 m ins.
Clean ,wash and rinse well .
Scrape or peel the skin using a peeler .
Slice into ½ inch slanting roundels.
Remember to slice in slanting manner.
Pressure cook upto 2 or 3 whistles .Check by slicing one roundel ,the knife should pass through .
METHOD
Heat oil in a cooker .
Add onion + green chilli and fry till light brown .
Add ginger garlic paste and fry till raw smell leaves .
Add tomato + salt and fry till soft .
Add green peas + potato and stir fry for 1 min.
Add garam masala pwdr + chilli pwdr + turmeric + jeera pwdr +coriander pwdr .
Mix well and fry for a min .
Add the cooked stem and mix well.
Add 1 or 2 cup water and mix well .
Adjust salt if required .
Pressure cook upto whistles .
Allow the pressure to release.
Open mix well, transfer to serving bowl .
Garnish with coriander leaves and serve .
NOTES
- Adjust masala as per taste.
- Buy stems of good quality .
