Shahi hariyali chicken

INGREDIENTS

  • Chicken pieces – 500 gms
  • Onion sliced – 2 small
  • Ginger garlic paste – 1 1/2 tsp
  • Few whole garam masalas
  • Green chilli – 4 or as per taste
  • Cashew – 5
  • Curd – 1/4 cup
  • Coriander leaves – 3 cup
  • Mint leaves – 1/2 cup
  • Coriander pwdr – 2 tsp
  • Turmeric pwdr – 1/4 tsp
  • Garam masala / kitchen king masala – 1 tsp
  • Kasoori methi pwdr – 1/2 tsp
  • Fresh cream – 1 tbsp
  • Oil – 2 tsp
  • Butter / ghee + oil – 2 tbsp
  • Salt to taste

PREPARATION

  1. Clean ,wash .rinse and wipe the chicken pieces .
  2. Heat 2 tsp oil in a pan ,add onions and fry till translucent.
  3. Add ginger garlic paste and cook till raw smell leaves .
  4. Add green chilli + cashews and stir fry for few secs.
  5. Add turmeric pwdr + garam masala pwdr + coriander pwdr + salt and stir fry .
  6. Add coriander leaves + mint leaves and mix well.
  7. Stir fry for a min till the leaves shrink and off the flame.
  8. Allow the mixture to cool.
  9. Transfer this mixture to a mixie jar and add the
  10. Grind it into a fine paste and keep aside.

METHOD

Heat butter + oil in a pan.

Add whole garam masalas and let it splutter .

Add chicken pieces and stir fry for a minute.

Cover and cook till it sweats completely .

Open and stir again .

Cook for 10 mins till the chicken is half cooked .

Add 1 cup water and mix well .

Cook for  8 to 10 minutes till the chicken is cooked .

*** Cooking time depends on the size of the chicken pieces .

Add the green paste and stir for a minute till all the masalas blend with the chicken .

Adjust little hot water if required .[ gravy has to be semi thick and not thin ]

Cover and simmer on low flame for  1 or 2 minute.

Add kasoori methi pwdr + cream and mix well .

Off the flame .

Shahi Hariyali chicken is ready to serve .

Serve hot with any rice items or any Indian bread items

NOTES

  1. You can avoid cashews if you want .
  2. To reduce cooking time use small chicken pieces .
  3. Use fresh coriander and mint leaves for bright colour.
  4. Adjust spices as per taste.
  5. Instead  curd , u can use tomato .
  6. Instead of chicken , u can use fried mixed veges /paneer / chole etc .
  7. It is a must try gravy .
