VEG DUM BIRYANI

INGREDIENTS

  • Mixed veges diced – 2 cup [ cauliflower + potato + carrot + beans ]
  • Paneer cubes – ½ cup
  • Biryani rice – 3 cup
  • Thick curd – 1 cup
  • Green chilli – 2 or 3 slit
  • Ghee + oil – ¼ cup
  • Whole garam masala – few [ cinnamon 1 inch + 4 clove  + 4 cardamom + 1 bay leaf ]
  • Jeera – 1 tsp
  • Sai jeera – 1 tsp
  • Ginger garlic paste – 4 tsp
  • Coriander pwdr – 2 tsp
  • Turmeric pwdr – ½ tsp
  • Red chilli pwdr – 1 tsp
  • Biryani masala [ any brand ] – 2 tbsp
  • Finely chopped coriander leaves – ¼ cup
  • Finely chopped mint leaves – ¼ cup
  • Fried crispy  onions – ¾ cup
  • Lemon juice – 1 tsp

PREPARATION

  1. Clean wash and soak the rice for 30 mins .
  2. Make a marinade of curd + coriander pwdr + chilli pwdr + biryani masala pwdr + turmeric + green chilli + coriander leaves + mint leaves + little salt  . Mix it well .
  3. Now add the veges + paneer to it and mix well . Keep aside for some times .
  4. Heat 8 cup of water in a big  pan . Add 1/2 tsp jeera + few whole garam masala + lemon juice + salt .
  5. Allow it to boil .add the soaked rice and allow it to boil . Once it starts boiling . drain the water and keep cooked rice aside .[ no need to cook more ]
  6. Crush the fried onions

METHOD

Heat ghee + oil in a pan .

Add sai jeera and let it splutter .

Add few whole garam masala + broken cashew and fry till golden .

Add ginger garlic paste  and fry till raw smell leaves .

Add marinated veges and fry for 2 to 3 mins

Add crushed fried onions

Mix well .

Add ½ cup water and cook for a minute .

Now layer the cooked rice .

Top it with fried onions + little ghee + saffron mixture .

Cover it tight . [ air tight ] You can cover with foil .

Cook on medium flame for 4 – 5 mins .

Now place a tava below and cook on very low flame for 20 t0 25 mins .

Once done ,allow it to sit for min 30 mins .

Now open the lid and serve it in layers .

Serve with any raita / salad /pickle /papad .
