Amla rice recipe

AMLA RICE / AMLA BHAAT / NELLIKAI SADAM / GOOSEBERRY RICE

Amla berries are rich in antioxidants, which reduce the risk of chronic health conditions like heart disease, diabetes, and cancer. Amla berries are also an excellent source of: Vitamin C. Vitamin E.

Regular intake of amla not only leads to a healthy and glowing skin but also improves eye sight, boosts the immune system, and regulates blood sugar and lipids. Eat as murabba, pickles or candies etc ; but consume it daily.

Amla rice recipe

INGREDIENTS

  • Cooked rice – 2 cup [grains should be separated ]
  • Amla – 2 or 3
  • Oil + ghee – 1 tbsp
  • Mustard seeds + urad dal – 1 tsp
  • Chana dal – 1 tsp
  • Peanuts – 1tbsp
  • Grated ginger – 1 tsp
  • Finely chopped onion  – 1 small
  • Red chilli chopped – 1
  • Green chilli chopped – 2 or as per taste
  • Curry leaves – few
  • Grated carrot – 2 or 3 tbsp
  • Asafoetida – a pinch
  • Salt to taste
  • Finely chopped coriander leaves to garnish .

PREPARATION

Wash the amla and grate it .

METHOD

Heat oil + ghee in a pan ,add mustard seeds + urad dal and let it splutter.

Add chana dal and fry till golden .

Add peanuts and fry

Add grated ginger and fry till raw smell leaves .

Add onion + red chilli + green chilli + curry leaves and fry till translucent .

Add carrot and fry for a min .

Add amla and fry for a min .[it doesn’t take any time to get cooked as we have grated it ]

Add asafoetida + salt and mix well

Add the cooked rice and mix well.

Stir fry for few seconds.

Finally garnish with coriander leaves and off the flame.

NOTES

  1. I have added carrot to add colour and reduce the sourness of amla.
  2. Adjust other ingredients as per taste.
