Corn meal contains dietary fiber, a beneficial carbohydrate. Fiber helps fill your stomach after a meal to keep you feeling satisfied and it helps soften your stool .

Puttu is basically a steamed rice flour and coconut log. 

Puttu is a breakfast dish eaten in the South Indian states of Kerala, Tamil Nadu and parts of Karnataka, as well as Sri Lanka. Puttu means “portioned” in Malayalam. It is made of steamed cylinders of ground rice layered with coconut shavings, sometimes with a sweet or savory filling on the inside. Puttu is served hot with sweet side dishes such as palm sugar or banana, or with curries such as dal, chickpea, mutton, fish or chicken. In Bhatkal, puttu is served with side dishes such as ghee and sugar or Paya.

Puttu is a popular breakfast in Kerala,  served either with Kadala Curry or just some sugar and bananas. Usually it is made with rice flour mixed with coconut , but instead of rice flour we can use other millets flour also like ragi / jowar / bajra / wheat /red rice etc .

INGREDIENTS

  • 1 cup corn meal store bought puttu flour
  • ½  cup or as required  freshly grated coconut
  • Luke warm water as needed 
  • Ghee 1 tsp
  • Salt as needed
  • Puttu maker

HOW TO MAIZE PUTTU FLOUR AT HOME – take 1 cup Makai ka ata and dry roast on medium flame till aromatic . Colour should not change .

PREPARING THE FLOUR MIXTURE –

Take the flour + ghee + salt in a wide plate.

Sprinkle the water little by little and start mixing the flour .

Remember we don’t have to knead the dough .

Keep sprinkling and mixing till the mixture becomes crumbly like bread crumbs.

TEST –  If you close your hand with flour in your palm, it should hold its shape.

There should be no big lumps .If the mixture is too dry then sprinkle little more water .

You can let it rest for 10min .

TIP FOR SOFTER PUTTU  – blend the mixture in mixie for few seconds .

PUTTU IN PUTTU MAKER

ASSEMBLING PUTTU FLOUR IN PUTTU MAKER AND STEAMING .

Keep 2 – 3 cup of water to boil in the puttu pot

Take  puttu maker.

 Place perforated plate in the bottom.

First spoon 2 or 3 tbsp of grated coconut. Then fill it with the prepared puttu flour about ½ the puttu maker – roughly 8 to 10 tbsp flour .

Again 3 tbsp coconut and puttu flour and finish with coconut layer and cover with the lid .

VERY IMPORTANT – Do not press or shake puttu maker while layering the flour and coconut . Just add it and leave it naturally.It should be a loose layer to allow steam to pass and cook .

Attach the puttu maker to the pot.

Steam for 6-8 mins  on medium – high flame.

Let the steam be forcefull enough to pass through the puttu maker . Do not steam in low flame.

You will see steam coming from top holes of the puttu maker lid .

Turn off heat and let is rest for 2 – 3 mins then gently push it with a wooden laddle or the skewer such that the puttu comes out clean.

Puttu is meant to be crumbly even after cooking and while it will hold its shape while cooking, it will fall apart as you dig in with your fingers. It is perfect.

Serve puttu hot or warm with kadala curry or veg stew or potato stew. It will also go well with South Indian chana masala. Also serve some bananas and pappadums by side.
