Pista nankhatai recipe

INGREDIENTS

  • Maida / wheat flour – 3/4 cup + 2 tbsp
  • Ghee – 1/3 cup
  • Sugar pwdr – 1/3 cup
  • Pista essence – 1 or 2 drops
  • Green food colour  – 1 or 2 drops
  • Baking pwdr – ¼ tsp OR baking pwdr – a pinch

METHOD

Sieve maida + baking pwdr twice .

Take ghee + sugar in a mixing bowl and whisk it till creamy .

Now add the other ingredients one by one and mix it well.

Knead it .

Now take a small portion and check whether it holds shape .

If it is very dry ,then add little ghee.

Remember the dough should not be oily or very wet .

It should be dry ,but you should be able give shape.

Divide the dough into equal portions.

Roll each portion into a ball and flatten it gently .

Preheat the oven at 180 * C convection mode.

Arrange the cookies on a tray .

Beke the cookies for 18 to  20  mins.

Check after 18 mins .

When hot the cookies will be soft .

On cooling it becomes crunchy and crispy.

Once done allow it to cool .

Store in an airtight container and enjoi .
