ALOO BONDA / POTATO BONDA / BONDA

Bonda is a deep-fried South Indian potato snack that has various sweet and savory versions in different regions. Most common of which is “Aloo Bonda”, and other region specific variations including potato replaced with sweet potato, tapioca, grated pineapple, green peas, paneer, etc.

A popular snack which is also known as mumbai batata vada or bombay potato vada recipe is a deep fried spicy potato dumpling. it is prepared with spiced mashed potato baji which is then coated with besan batter and then deep fried till golden crisp.

INGREDIENTS

  • 4 or 5 Potato
  • 1 onion finely chopped
  • 2  tbsp  ginger garlic green chilli paste
  • 2 tsp Lemon juice
  • 2 or 3 tbsp finely chopped coriander leaves
  • ¼  tsp Turmeric
  • Salt As needed
  • 1 cup Besan flour
  • 2 tbsp Rice flour
  • 2 tbsp Corn flour
  • 1 tbsp – Ghee / oil
  • 1 tbsp hot oil for batter  
  • Generous pinch of asafoetida
  • 1/8 tsp Turmeric
  • ¼ tsp Cooking soda
  • Salt – As needed
  •  oil for deep frying

PREPARATION

Pressure cook potatoes for 3 – 4  whistles till soft .

Peel off the skin and mash it well. Keep aside.

In a pan heat oil .

Add onion and stir fry till translucent .

Add  mustard + urad dal +  curry leaves and give a mix .

Add ginger garlic green chilli  paste and stir fry till raw smell leaves .

 Add turmeric + salt and give a mix .

Add the coriander leaves and give a nice mix .

Add mashed potatoes and mix well so that the turmeric blends evenly.

 Stir for 2 minutes.

Drizzle  lemon juice and give a  nice mix.

Transfer to a plate and cool down.

Make  equal sized balls and set aside.

Heat oil in a kadai .

In a mixing bowl take besan + cornflour + rice flour + turmeric + salt +   1tbsp hot oil

Add  little water as needed to make a  thick batter . [ batter  should be thick enough to coat the potato balls ]

Now add baking soda and beat the batter very well for 1 or 2 mins .

Dip each balls into the besan batter and slide it into the hot oil

Turn over  and fry  evenly on both sides. Cook on medium flame.

Deep fry till golden .

Serve aloo bonda along with chutney or tomato sauce and a cup of hot tea .

We can also serve it with pav , like we do for Mumbai vada pav

NOTES

  1. The stuffing can be made to suit your taste buds by adding ingredients of your choice like mint leaves, red chilli powder , gram masala , crushed whole coriander , fennel seeds ,cashew etc.
  2. Its important to  beat the batter well for 1 or 2 mins.
  3. You can try the same recipe with samosa stuffing –
  4. The batter Should be thick.
  5. You can also add pepper powder / red chilli powder / ajwain  in the batter.
  6. You can also double fry for extra crisp bondas.
