Snakegourd with chana dal
SNAKEGOURD WITH CHANA DAL
INGREDIENTS
- Snake gourd – 250 gms
- Chana dal – ¼ cup
- Oil – 1 or ½ tbsp.
- Mustard seeds – 1 tsp
- Onion finely chopped – 1
- Green chilly chopped – 2 or 3 or as per taste
- Curry leaves – few
- Turmeric pwdr – ¼ tsp
- Salt as per taste
- Freshly grated coconut for garnish – 4 tbsp.
PREPARATION .
- Scrape the outer whitish covering of the snake gourd using the knife . Cut it vertically into 2 and discard the white pulpy portion of seeds . Chop into small pieces .
- Soak the chana dal for min 1 hr or more .
METHOD
Heat oil in a pan and add the mustard seeds , allow it to crackle.
Add onion + curry leaves + chiili and fry till translucent. [ don’t brown ]
Add the soaked dal ,mix well .
Add a tbsp of water and cook for a min .
Now add the snake gourd and cover the chana dal . [ don’t mix ]
Cover and cook so that the snake gourd sweats [ leaves water ] and the chana dal softens for 2 or 3 mins.
Remove the lid and mix well .
Sprinkle little water if required .
Add salt and turmeric pwdr and mix well .
Cook till the vege + dal is cooked .
Once done [ complete water evaporates and you see oil ] , mix in the coconut and off the flame.
Serve as a side dish for rice or chappati.
NOTES.
- Don’t over cook the dal , it has to be whole and soft.
- You can avoid dal and make without it.
- Instead of chana dal you can add 1 tbsp of moong dal. [ no need of soaking ]
- You can pressure cook the chana dal and add it.
- I like to chop the vegetables into small pieces as it cooks fast and kids don’t make any fuss.
- Many veges like cabbage , tendli , beans etc can be made in same process with chana dal.
- Instead of green chilli ,you can use red chilli.
- Instead of adding water , you can put the water on top of the lid , cover and then cook.
