MALABAR SPINACH SAMBAR RECIPE

Malabar spinach is high in vitamin A, vitamin C, iron, and calcium.  It is a rich source of soluble fibre and hence good for treating constipation. It has a high amount of protein for a plant and is also a good source of magnesium, phosphorus, and potassium. Another good reason to eat malabar spinach is that it has a good amount of antioxidants, particularly beta carotene and lutein.

INGREDIENTS

  • Malabar spinach leaves chopped – 2 cup
  • Tamarind – marble size soaked in 1 cup hot water
  • Toor dal – ¼ cup
  • Tomato – 1
  • Turmeric – ¼ tsp
  • Fresh coconut – ¼ cup
  • Sambar powder – 1 ½ tbsp
  • Jaggery – 1 tsp
  • Oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Red chilli – 2 or 3
  • Salt to taste

PREPARATION

  1. Pressure cook dal + salt + turmeric + tomato till soft . Mash the dal . Add roughly 1 cup hot water , mix well and keep aside .
  2. Extract tamarind juice and keep aside.
  3. Dry roast the coconut till golden . Add sambar powder and give a nice mix. Off the flame ,
  4. Grind into fine paste by adding tamarind juice + jaggery .

METHOD

Heat oil in a pan .Crackle mustard seeds.

Add red chill and give a stir .

Add the leaves and stir fry for 6 to 7 mins , till it shrinks completely .

Add the coconut paste + cooked dal and mix well.

Adjust hot water if  needed.The sambar thickens on cooling .

Adjust salt as needed .

Bring to a boil.Lower the flame and simmer for 1 mins and off the flame.

Spinach sambar is ready to serve .
