How to make sambar without tomato

NO TOMATAO SAMBAR / SAMBAR MADE WITYHOUT DAL

INGREDIENTS

  • Toor dal or chana dal – ½ cup
  • Tamarind – lemon size soaked in 1 cup hot water
  • Turmeric Powder – ½  tsp
  • Asafoetida – pinch
  • Sambar Powder – 2 1/2  or 3 tbsp  or as per taste
  • Coriander pwdr – 1 tsp
  • Jaggery – 2 tsp
  • Sambar vegetables – 1 or 1 ½  cup [ drumstick/potato/pumkin/white pumpkin/Shallots etc ]
  • Salt to taste
  • Oil – 2 tsp
  • Mustard Seeds  – 1 tsp
  • Curry leaves – few
  • Coriander Leaves to garnish

METHOD

Soak dal for 10 mins .Pressure cook it with little turmeric + salt till soft>once done mash it and keep aside.

Note – if using chana dal soak for more time.

Extract tamarind juice and transfer to abig pot.

Add 2 1/2 or 3 cup of water.

Add sambar pwdr + turmeric + chilli pwdr + coriander pwdr + salt + asafoetida and mix well with hands .

See that there are no lumps.

Keep on medium flame and cook till the veges becomes soft .[ 10 mins ]

Keep stirring inbetween.

Add the cooked dal and mix well.

Adjust hot water or salt if needed.

Bring to a boil .

Lower the flame and simmer for 3 to 4 mins .

Off the flame and cover it.

In a small pan heat oil.

Add mustard seeds and let it crackle.

Add red chjlli + curry leaves and give a mix.

Pour this over the sambar .

Finally garnish over with coriander leaves .
