Peanut stir fry recipe/PEANUT SUNDAL

                                  PEANUT SUNDAL / VERKADALAI SUNDAL  / STIR FRY PEANUT

INGREDIENTS

  • Peanut cooked – 1 cup
  • Fresh grated coconut – 3 or 4 tbsp
  • Oil – 1 tsp
  • Mustard seeds + urad dal – 1tsp
  • Whole red chilli broken – 2 or 3
  • Curry leaves – few
  • Asafoetida – a pinch
  • Salt as per taste

PREPARATION

If you are using dry peanuts ,then soak it for minimum 2 hrs or overnight and pressure cook it upto 3 whistles with salt. Refer here – Peanut chaat recipe

OR

If using shelled peanuts, then soak for 10 minutes with shell and wash the peanuts to remove the soil. Pressure cook it with salt upto 4 whistles. Once cooled remove the shells.

METHOD

Heat oil in a pan .

Add mustard seeds + urad dal ,allow it to crackle.

Add curry leaves + asafoetida + red chilli and fry for few seconds.

Add the cooked peanuts and mix well.

Adjust salt.

Add the grated coconut and mix well.

Fry for 1 minute and off the flame.

Serve.

NOTES

You can also add grated ginger while tempering.

Don’t overcook the peanuts.It should have a crunchy texture.
