Creamy corn spinach

CREAMY CORN SPINACH PASTA [ image got corrupted ]

INGREDIENTS

  • Cooked pasta – 2 cup
  • Very finely chopped palak / spinach – 1 cup
  • Tomato – 3
  • Boiled corn – ¼ cup [ optional ]
  • Fresh cream – ¼ cup
  • Red chiili flakes – ½ tsp
  • Mixed herbs / oregano – 1 ½ tsp
  • Pepper pwdr – ¼ tsp
  • Plain water or stock or milk – 1 ½ cup  or as required
  • Oil +butter – 1 tbsp
  • Salt to taste

PREPARATION

  1. Cook the pasta till done.
  2. Boil the tomatoes for 3 t o 4 mins . Peel it and blend into fine puree .
  3. Prepare stock by either boiling vegetables or just use 1 maggi magic cube. Dissolve the magic cube in 1 cup hot water .*** Chicken stock makes this recipe more yummy .

METHOD

Heat oil + butter .

Add garlic and stir fry .

Add tomatoes and cook till oil separates,

Add palak and cook till it shrinks.

Add corn and mix well.

Add stock or water or milk and mix well .

Add chilli flakes + oregano or mixed herbs + salt + pepper and mix well.

Add fresh cream and mix well.

Add cooked pasta and mix well.

Simmer on low flame for a minute and off the flame.

Garnish with grated cheese and serve hot.

NOTES

  1. Instead of maida you can use wheat flour .
  2. If it becomes very thick adjust by adding milk and adjust seasoning also.
  3. It is ok if you don’t have stock ,use plain water or double the amount of milk .But stock enhances the flavour .I use chicken magic cubes.1 cube is enough .
  4. Be careful while adding salt as butter and cheese have salt.
  5. You can use any variety of pasta. I have used a combo of spaghetti and penne pasta.
