HUNAN CHICKEN recipe

INGREDIENTS

  • Boneless chicken cubed – 250 gms
  • Soya sauce – 1 tsp
  • Maida – ½ cup
  • Cornflour – 3 tbsp
  • Pepper pwdr – 1 ½ tsp
  • Baking soda – a generous pinch or ½ tsp eno pwdr to make the batter light
  • Oil to deep fry
  • Salt to taste
  • Olive oil – 1 tbsp [any oil will do ]
  • Finely minced ginger + garlic – 1 tbsp
  • Finely chopped red chilli – 2 or 3
  • Finely chopped spring onion – ¼ cup [white part ]
  • Capsicum strips – ¼ cup
  • Tomato ketchup /sauce – 1 tbsp
  • Honey – 1 tbsp
  • Vinegar – ½ tsp
  • Soya sauce – 1 ½ tsp
  • Finely chopped spring onion greens for garnish – 2 tbsp

PREPARATION

  1. Clean ,wash and rinse the chicken .chop it into small cubes . Pat dry the chicken cubes with kitchen towel .
  2. Marinate the chicken with 1 tsp soya sauce + salt and keep aside for sometime.
  3. Make a batter of maida + cornflour + salt + 1 tsp pepper pwdr + baking pwdr /eno + water .
  4. Make a mixture of chilli sauce + soya sauce + tomato ketchup + honey + 1 tbsp water + vinegar and keep aside .
  5. Dry roast the sesame seeds .
  6. ***** Keep all the ingredients ready befor u start .

Add the marinated chicken into the batter and mix well .

Heat oil in a deep pan .

Take each chicken piece at a time ,coat it well with the batter and slide it into the hot oil.

Fry in small batches ,don’t overcrowd the pan .

Stir and fry till it is cooked , golden brown and crisp .

Remove on an absorbent paper and keep aside.

Heat 1 tbsp olive oil in another pan . [you can add little butter ]

Add the minced garlic + ginger and stir fry . [colour should not change ]

Add spring onion + chopped red chilli and fry .

Add capsicum and stir fry .[it should have the crunch ,don’t over cook ]

Add  pepper pwdr + salt + sauce  mixture .

Mix well .

Add the batter fried chicken and mix well ,till it is coated from all sides .[u can toss it ]

Off the flame and garnish with spring onion greens + roasted sesame seeds .

Serve hot as a starter ,infact you can also stuff it in bread or chapatti and relish it .

NOTES

  1. You can red or yellow capsicum to add more colour to the dish.
  2. Same recipe can be tried with Manchurian balls /paneer / prawns .
  3. Instead of honey we can sugar.
  4. While making the batter instead of using baking soda ,u can use soda water to make the batter.
  5. You can also add green chilli to increase the hotness.
  6. You can add little red food colour to the batter ,to make the dish look more bright ,just like it is served in restaurants .
