Methi pulao
METHI PULAO
INGREDIENTS
- Cooked rice – 4 cup
- Chopped methi leaves / fenugreek leaves – 2 cup tightly packed
- Finely chopped coriander leaves – ¼ cup
- Cooked green peas /corn – ¼ cup [ optional]
- Oil + ghee – 2 or 3 tbsp
- Whole garam masala – few [ black cardamom / star anise ,black pepper ,jeera,clove ,cinnamon ,cardamom,bayleaf ]
- Onion chopped finely – 1 big
- Ginger garlic green chilli paste – 2 tsp
- Turmeric pwdr – ¼ tsp [ optional ]
- Sugar – 1/2 tsp
- Salt to taste
PREPARATION
Cook rice with salt .Don’t over cook .Grains should be separated .

Heat oil + ghee add whole garam masala ,let it splutter .[never allow whole garam masala to burn ]
Add onion and fry till light brown .
Add ginger garlic green chilli paste and fry till raw smell leaves .
Add the methi leaves and fry till it shrinks completely .
Add coriander leaves and give a nice mix well .
Add the boiled green peas and mix well .
Add salt + sugar and mix well .
Add the cooked rice , mix well and cover – cook for a minute .
Drizzle 2 tsp of lemon juice and give a stir .
Off the flame .
Serve it with side dish /raita/papad /pickle.
NOTES
- You can cook it together in a cooker .
- Don’t chop the leaves much it will become bitter .
- You can also add a tomato .
- Adding kasoori methi pwdr adds more flavour to rice.
- Tip – Soaking methi leaves in water + sugar + salt helps in reducing bitterness.
- You can garnish with fried cashew / paneer cubes .
- Together with peas you can add other veges also.[ beans,potato etc ]
