METHI PULAO

INGREDIENTS

  • Cooked rice – 4 cup
  • Chopped methi leaves / fenugreek leaves – 2 cup tightly packed
  • Finely chopped coriander leaves – ¼ cup
  • Cooked green peas /corn – ¼ cup [ optional]
  • Oil + ghee – 2 or 3 tbsp
  • Whole garam masala – few [ black cardamom / star anise ,black pepper ,jeera,clove ,cinnamon ,cardamom,bayleaf ]
  • Onion chopped finely – 1 big
  • Ginger garlic green chilli paste – 2 tsp
  • Turmeric pwdr – ¼ tsp [ optional ]
  • Sugar – 1/2 tsp
  • Salt to taste

PREPARATION

Cook rice with salt .Don’t over cook .Grains should be separated .

Heat oil + ghee add whole garam masala ,let it splutter .[never allow whole garam masala to burn ]

Add onion and fry till light brown .

Add ginger garlic green chilli paste and fry till raw smell leaves .

Add the methi leaves and fry till it shrinks completely .

Add coriander leaves and give a nice mix well .

Add the boiled green peas and mix well .

Add salt + sugar and mix well .

Add the cooked rice ,  mix well and cover – cook for a minute .

Drizzle 2 tsp of lemon juice and give a stir .

Off the flame .

Serve it with side dish /raita/papad /pickle.

NOTES

  1. You can cook it together in a cooker .
  2. Don’t chop the leaves much it will become bitter .
  3. You can also add a tomato .
  4. Adding kasoori methi pwdr adds more flavour to rice.
  5. Tip – Soaking methi leaves in water + sugar + salt helps in reducing bitterness.
  6. You can garnish with fried cashew / paneer cubes .
  7. Together with peas you can add other veges also.[ beans,potato etc ]
