Aloo kachori recipe

INGREDIENTS

  • Mashed potato – 2 cup
  • Sabudana flour/pwdr  – 4 tbsp
  • Salt to taste
  • Freshly grated coconut – ½  cup
  • Lime juice – 2 tsp
  • Fresh Coriander leaves – 1 cup
  • Roasted skinless peanut – ½ cup
  • Green chilli – 1 or 2
  • Grated ginger – ½ tsp [optional ]
  • Feneel seeds – ½ tsp
  • Sugar – ½ tsp
  • Raisins – 2 or 3 tbsp
  • Oil to deep fry

PREPARATION KACHORI COVER/ DOUGH

  1. Boil the potatoes, peel the skin and then mash or grate it into the mixing bowl.
  2. Dry roast sabudana on low flame till it puffs up a bit ,colour should not change .Cool it and grind it into fine pwdr .
  3. Add sago flour and salt into the mashed potatoes, mix it well and knead into the firm dough and keep aside.

METHOD

NOTES

  1. Instead of sabudana flour we can use sama rice flour or corn flour or arrowroot pwdr
  2. The balls can be refrigerated and used later .
  3. Adjust ingredients as per taste
  4. We can also add finely chopped cashew .
  5. If making for upvas ,use rock salt .
  6. We can use any stuffing of our choice .
  7. As the chutney is green there is no need to make green chutney ,serve with ketchup .
  8. Instead of deep frying ,you can bake it  or air fry it or fry in appe pan .
  9. We can flatten the balls like pattice and shallow fry also .
  10. For less absorbion of oil ,we can dust the balls with corn flour .
