BHINDI KI SABJI

INGREDIENTS

  • Tender ladies finger – ¼ kg
  • Onion – 1 large
  • Tomato – 1 medium
  • Oil – 1 tbsp
  • Cumin seeds – ½ tsp
  • Red chilli pwdr – 1 tsp or as per taste
  • Coriander pwdr – 2 tsp
  • Turmeric pwdr – ¼ tsp
  • Sugar – ¼ OR ½  tsp
  • Salt as per taste
  • Chaat masala – ¼ tsp
  • Finely chopped coriander leaves for garnishing.
  • 1 tbsp oil to fry the ladies finger

PREPARATION

  1. Wash, pat dry the ladies finger ,cut both the ends and chop it as per the size you want.
  2. **** TIP – after chopping spread it on a plate ,and keep it open under fan or sunlight for minimum 30 mins or more – helps in avoiding stickiness while cooking .

METHOD

Heat oil in a pan.

Add the cumin seeds let it splutter.

Add the onions and fry till light brown in colour.

Add the tomatoes and cook till they become soft and pulpy.

Add chilli pwdr  + coriander + turmeric + sugar + salt and saute  till the oil separates from the mixture.

Add the ladies finger and stir gently till it gets completely coated with the masala.

Add the chat masala and stir.

Cover and cook for a minute.

Off the flame.

Garnish with coriander leaves and serve as side dish.

NOTES

  1. We can also use garam masala or amchur pwdr.
  2. Instead of coriander leaves we can use kasoori methi leaves.
  3. You can also add boiled/fried potatoes.
  4. Adjust masalas as per your taste.
  5. Chaat masala gives a chatpatta taste and amchur give a tanginess.
