Carrot curd salad
CARROT CURD SALAD
INGREDIENTS
- Grated carrot – 1 ½ cup [ squeeze the excess juice ]
- Curd – ½ cup
- Sliced onion – ¼ cup
- Finely chopped coriander leaves – 1 tbsp or more
- Finely chopped green chilli – as per taste
- Skinless roasted peanut – 2 tbsp [ coarsely crushed ]
- Chaat masala – ¼ tsp
- Roasted jeera pwdr – a generous pinch
- Salt to taste
METHOD
Mix all the above ingredients with clean hands .[mash it ,so that all the ingredients blend together well ]
Serve chilled .
VARIATION – You can give a tadka [temper ] of ghee + hing + rai
NOTES
- No need to add sugar as the carrot has sweetness .
- You can make a mixture of carrot + beetroot + radish .
- It should be more of carrot and less of curd .
- It is ok if you don’t squeeze the juice from the carrot .[ juice can be used to add in gravies or soup or kneading dough ]
- You can avoid curd and make a dry salad – just drizzle few drops of lemon juice.
- For kids avoid green chilli and add pepper pwdr .
- U can also add finely chopped tomatoes .
- Same recipe goes for beetroot /cabbage /cucumber /onion .
- For more colour we can add purple cabbage .
