Celery soup
CELERY SOUP
Celery has received a lot of attention as a ‘superfood,’ with supporters claiming that celery juice helps combat a range of ailments, including inflammation, high blood pressure, and high cholesterol. Celery is a member of the carrot family.
Celery is rich in vitamins and minerals with a low glycemic index. You’ll enjoy vitamins A, K, and C, plus minerals like potassium and folate when you eat celery. It’s also low in sodium. Plus, it’s low on the glycemic index, meaning it has a slow, steady effect on your blood sugar.
INGREDIENTS
- Chopped celery stems – 1 cup
- Coriander leaves – ¼ cup
- Chopped garlic – 1 tbsp
- Butter – 1 tbsp
- Onion sliced – 1
- Bay leaf – 1
- Cinnamon – tiny piece
- Cashew – 4 or 5
- Salt to taste
- Pepper pwdr
- Lemon juice
- water / stock – 2 cup

METHOD
The celery should be fresh and good on its own, not old or bitter.
Heat butter in a cooker , add cinnamon + bay leaf and give a stir .
Add garlic and stir fry for few seconds.
Add onion and stir fry for 1 min .
Add cashew and give a mix
Add coriander leaves and give a nice mix .
Add celery and stir for a min .
Add water / stock and give a mix .
Add salt .
Pressure cook upto 2 whistles
Allow the pressure to release on own .
Open the cooker , discard the bay leaf and cinnamon .
Blend it well .
If hot serve it , else give it a boil .
Serve hot . Sprinkle pepper pwdr .
If required drizzle few drops of lemon juice .
