Creamy corn spinach
CREAMY CORN SPINACH PASTA [ image got corrupted ]
INGREDIENTS
- Cooked pasta – 2 cup
- Very finely chopped palak / spinach – 1 cup
- Tomato – 3
- Boiled corn – ¼ cup [ optional ]
- Fresh cream – ¼ cup
- Red chiili flakes – ½ tsp
- Mixed herbs / oregano – 1 ½ tsp
- Pepper pwdr – ¼ tsp
- Plain water or stock or milk – 1 ½ cup or as required
- Oil +butter – 1 tbsp
- Salt to taste
PREPARATION
- Cook the pasta till done.
- Boil the tomatoes for 3 t o 4 mins . Peel it and blend into fine puree .
- Prepare stock by either boiling vegetables or just use 1 maggi magic cube. Dissolve the magic cube in 1 cup hot water .*** Chicken stock makes this recipe more yummy .
METHOD
Heat oil + butter .
Add garlic and stir fry .
Add tomatoes and cook till oil separates,
Add palak and cook till it shrinks.
Add corn and mix well.
Add stock or water or milk and mix well .
Add chilli flakes + oregano or mixed herbs + salt + pepper and mix well.
Add fresh cream and mix well.
Add cooked pasta and mix well.
Simmer on low flame for a minute and off the flame.
Garnish with grated cheese and serve hot.
NOTES
- Instead of maida you can use wheat flour .
- If it becomes very thick adjust by adding milk and adjust seasoning also.
- It is ok if you don’t have stock ,use plain water or double the amount of milk .But stock enhances the flavour .I use chicken magic cubes.1 cube is enough .
- Be careful while adding salt as butter and cheese have salt.
- You can use any variety of pasta. I have used a combo of spaghetti and penne pasta.
