Dry fruit roll

    

INGREDIENTS

  • Dates / khajur – 1 cup good quality [seedless]
  • Poppy seeds / khus khus – 2 tbsp
  • Cashew finely chopped – ¼ cup
  • Almonds / badam finely chopped – ¼ cup
  • Pista finely chopped – ¼ cup
  • Ghee – 1 tbsp

PREPARATION

  • Discard the seeds of the khajur and chop it very very finely .
  • Also finely chop the other dry fruits .

Dry roast the poppy seeds on medium flame till aromatic.[colour should not change , less than a minute ]

Dry roast the cashew  + pista + badam .[ colour should not change , 1 – 2 Mins ]

Heat 1 tbsp ghee in a non stick pan on medium low flame, add the chopped khajur .

Stir cook for 4 – 5 minutes, till it becomes soft / moist / pulpy.

Off the flame when it becomes like a whole mass.

Immediately mix in the dry fruits.

Mix all the ingredients well.

Allow it to cool .

Remove it in a plate and start kneading it once you are able to handle it .

Roll it into a cylindrical shape .

Spread the poppy seeds on a plate and roll the dry fruit  roll over it.

Roll it by gently pressing it ,so that it is coated well on all sides .

Roll it in a foil or plastic and refrigerate for  ½ an hour  to 1 hour.

Remove and slice it into coin shape .

Relish it .

Store it in airtight containers .Will last for more than 2 weeks.

NOTES

  1. For extra flavour add in 1 tbsp of gulkand in the khajur .
  2. You can add more ingredients like white sesame, melon seeds, desiccated coconut, kismis , fig /anjeer , edible gum [gond ]
  3. I tried grinding the dates in the mixer ,but could not – the blades got jam .
  4. You can add 1 tbsp of condensed milk , if the mixture is too dry.
  5. You can give any shape.
  6. You can also roll it into balls.
  7. Instead of coating with poppy seeds, you can coat it with desiccated coconut .Instead of rolling with poppy seeds , we can add the roasted poppy seeds with the dry fruits.
  8. If using Poppy seeds , clean by picking tiny sand particles .
  9. After removing from fridge it will become very hard for slicing .So keep aside for sometime and then slice it .
  10. Use dates of good quality.Soft.
