Fresh turmeric pulao
FRESH TURMERIC PULAO
Turmeric and especially its most active compound curcumin have many scientifically-proven health benefits, such as the potential to prevent heart disease, Alzheimer’s and cancer. It’s a potent anti-inflammatory and antioxidant and may also help improve symptoms of depression and arthritis.
Fresh turmeric or kachchi haldi has an earthy and peppery flavour and a slightly bitter taste.
Fresh turmeric helps facilitate smoother digestion through the tracts. * Consumption of raw turmeric may also help treat stomach ulcers and irritation. * It also helps in reducing inflammation in the body. * All of these factors also lead to a reduction of skin impurities.

INGREDIENTS
· Cooked rice – 4 cup [ grains should be separated ,not overcooked ]
· Grated fresh turmeric – 1 cup
· Finely chopped onion – 1
· Ginger garlic green chilli paste – 2 tsp
· Curry leaves – few
· Ghee + oil – 1 ½ tbsp.
· Whole garam masala – 1 small piece of cinnamon + 1 clove + 1 cardamom + 1 bayleaf + 3 black pepper + little jeera + ½ star anise
· Finely chopped coriander + mint leaves – 2 tbsp
· Salt as required + 1 tsp sugar

METHOD
Heat oil + ghee, add the whole garam masala and allow it to splutter . [don’t burn it ]
Add onions + curry leaves and fry till translucent .
Add ginger + garlic + green chilli paste and fry till raw smell leaves .
Add the grated turmeric .
Stir fry for 6 to 7 mins till it softens .
Add coriander + mint leaves and give a nice mix .
Add salt and sugar and give a mix .
Add the rice and mix well .
Lower the flame and cook for a min.
Drizzle lemon juice , give a mix and off the flame .
Garnish with finely chopped coriander leaves .
Serve with any side dish like raita / salad/papad/pickle .
Eat it with spoon else you will stain your hands .
NOTES
1. The above recipe is like a simple pulao recipe, you can give a variation by just giving tadka [phodni] or simple fried rice .
2. Add more turmeric as it shrinks on cooking .
3. This recipe is a good way of giving turmeric to your kid.
4. While tempering you can add peanuts or 1 tsp of urad dal or 1 tsp of chana dal or even cashew .
5. I have used leftover rice.
