SINDHI TAHIRI

A traditional sweet rice recipe , specially made on Sindhi new year day – CHETI CHAND
Traditionally, Tahiri is made using jaggery(gur) and is cooked on dum(slow cooking), since jaggery has a tendency to stick to the bottom of the pan.
You can cook this traditional way, dum (slow) cooking or cook it in Instant Pot or Pressure cooker.
Tahiri or Sindhi sweet rice with some Sindhi Side dishes .
INGREDIENTS
- 1 cup aged basmati rice
- 1 cup jaggery / brown sugar / sugar as per taste
- 1 tbsp ghee/clarified butter
- 2 tsp oil
- 2 – 3 green cardamom
- 1 black cardamom
- Few dry coconut slices
- 3 ½ cup water or as needed
- pinch of salt
FOR GARNISH:
- 1 tbsp ghee
- 1 tbsp raisins
- 5 almonds
- 5 Cashews halves
- 1 tsp fennel seeds
PREPARATION
- Clean , wash , rinse and soak the rice for 30 mins.
- Take 1 cup water + jaggery in a pan .Once the jaggery dissolves completely , off the flame . Drain and keep aside .
METHOD
After 30 mins , drain the rice in a strainer .
Heat 1 tbsp of ghee + oil . and fry the raisins, + cardamom + coconut until nice golden brown.
Add 21/2 cup water + salt and bring it to a boil
Add soaked rice and mix well .
Allow it to cook on medium flame
Once the water reaches rice level , add jaggery water .
Cover and allow it to cook on low flame till the jaggery level reaches rice level .
Heat a pan with 1 tbsp ghee , add the fennel seeds + badam + cashew , stir fry for a minute and off the flame .
Add this over the cooked rice .
Cover and cook till completely moisture is absorbed .
Off the flame and let it rest for for 5 mins .
Fluff the rice delicately .
Serve Tahiri / Sindhi sweet rice with some Sindhi Sai Bhaji and any other sindhi side dishes .

NOTE
- Use a heavy bottom pan for cooking .
- Water quantity depends on the quality of rice .
- Colour of the cooked rice depends on the colour of jaggery we used .
- Add jaggery as per taste.
- use good quality basmati rice .
- Tahiri is traditionally made using jaggery, but you can make this recipe using brown sugar or just the regular sugar.
