SUGAR FREE SOFT ENERGY BARS / KHAJUR PAK / KHAJUR DRY FRUITS BURFI

An easy and interesting healthy dessert snack recipe made with dates and dry fruits. The recipe is very similar to the dates energy bar or dates ladoo, yet it is unique with the addition honey to it.
Khajur Pak is a winter special recipe .
Dry fruits are rich in vitamins and proteins; they also boost immunity and prevent lifestyle diseases such as cholesterol and diabetes. Most dry fruits are rich in minerals, proteins, fibre and vitamins add to that they are tasty and delicious too. Dry fruits are excellent and healthy substitute for daily snacks.
Seeds are great sources of fiber. They also contain healthy monounsaturated fats, polyunsaturated fats and many important vitamins, minerals and antioxidants. When consumed as part of a healthy diet, seeds can help reduce blood sugar, cholesterol and blood pressure.

INGREDIENTS
- 2 cup soft deseeded dates [ I used khimia ]
- 1 cup almonds
- 1 cup cashew
- 1 cup walnut
- ¼ cup unsalted pista
- ½ cup seeds [ sunflower = flax + pumpkin + sesame black and white ]
- ½ tsp salt
- ½ tsp cardamom pwder
PREPARATION
Deseed the dates and soak in 1 cup hot water for 2 hrs.
Grind in fine paste.

Heat a pan and ass the dry fruits = seeds one by one .
Dry roast on medium flame for mins till crisp.
Allow to cool and grind into coarse powder .
Add the dates puree + salt + cardamom and mix well.
Stir and cook for 8 to 10 mins on low flame .
Transfer to a greased tray , spread it evenly.
Garnish with chopped dry fruits .
Once it sets , cut into desired shape or size .
Serve khajur pak or store in an airtight container for a month in the refrigerator.
