Varaicha bhat
VARAICHA BHAT / UPVASACHA VARICHA BHAT /BAGAR /SAMO RICE
INGREDIENTS
1 Cup Varai. Samai, Samo Rice
2 cup Water
2 or 3 Green Chillies
1 tsp Cumin Seeds
2 tbsp Ghee
Salt to Taste
PREPARATION
Clean,wash,rinse and soak the samo for 20 to 30 mins.
METHOD
In a pan , over medium heat, melt the ghee.
Add cumin seeds.
When the cumin seeds starts to change colour, add the green chilly pieces.
Stir fry for few seconds .
Add the Varai and mix well.
Add 2 cups of water and salt.
*** If you want soft bhaat then add ½ cup extra water .
Mix well.
Cover and cook till the Varai is well-cooked.
- As the varai is soaked ,it takes very less time to cook .
In between do stir it ,so that it doesn’t stick at the bottom .
My bhaat was of soft grainy texture not over cooked .{ 2 cups water was enough as the rice was already soaked for enough time }
Serve with Dhanyachi amti or shengdanyachi amti or even coconut chutney .
This is very similar to southindian Pongal recipe .
NOTES
- If you want you can dry roast the varai for 1 or 2 mins ,colour should not change.
- Finally we can also add 2 tbsp of peanut pwdr to the cooked sama.
- Just like regular rice ,you can cook in pressure cooker .
- Some add clove /cinnamon /bayleaf to get pulao taste.
