Capsicum rice recipe

                                                                         CAPSICUM RICE RECIPE

INGREDIENTS

  • Cooked basmati rice – 2 cup
  • Chopped capsicum all 3 colours – 1 cup
  • Onion – 1 finely chopped
  • Green chilli chopped – 2 or as per taste
  • Ginger garlic paste – 1 tsp
  • Oil + ghee – 1 tbsp
  • Whole garam masala 1 of each – cardamom , clove ,star anise ,cinnamom
  • Sai jeera – ½ tsp
  • Whole black pepper – ½ tsp
  • Salt as per taste

PREPARATION

Soak basmati rice for 20- 30 mins and cook till fully done [ grainy ] , not mushy. You can also use leftover rice.

METHOD

Heat oil in a pan , add whole garam masala + sai jeera + black pepper and fry. [dont burn it ]

Add finely chopped onion + green chilli  and fry till translucent.

Add ginger garlic paste and fry till raw smell leaves.

Add the capsicum and stir fry for 3-4 minutes . [ it should be crunchy and not very soft ]

Adjust salt and add the cooked rice and mix well.

Stir and cook for 2 mins till the flavors blend with the rice.

Serve with raita , any gravy , papad etc.

NOTES

  1. For more flavour add maggi cubes .
  2. Instead ghee use butter.
  3. You can also add finely chopped coriander leaves and mint leaves.
  4. You can also add other veges like potato ,beans ,green peas carrot ,cauliflower .
