Crispy veg corn lollipop

                                          CRISPY VEG CORN LOLLIPOP

INGREDIENTS

  • Boiled corn – 1 ½ cup
  • Mashed Potato – 3 medium
  • Fresh bread slices – 2 or 3
  • Grated carrot or beetroot – ¼ cup [squeeze off the excess juice ]
  • Finely chopped onion – ¼ cup
  • Finely chopped capsicum – ¼ cup
  • Cooked green peas – 1/4 cup [mash it a bit ]
  • Finely chopped green chilli – 1 [ omit if making for kids ]
  • Chilli pwdr – ½ tsp or as per taste
  • Garam masala pwdr – ½ tsp
  • Chaat masala pwdr – ½ tsp
  • Grated ginger or ginger paste – 1 tsp
  • Turmeric pwdr – ¼ tsp
  • Roasted gram flour or cornflour – 2 tbsp  [ for binding ]
  • Finely chopped coriander leaves – 3 tbsp
  • Lemon juice – 2 tsp
  • Bread crumbs to dust [ optional ]
  • Salt to taste
  • Oil to deep fry
  • Ice lolli sticks

PREPARATION

  1. Boil the corns drain the water completely and wipe it with a napkin .[we don’t want any moisture ] Blend 1 ¼ cup into coarse mixture [ don’t add water ],keep ¼ whole corn aside .
  2. Blend the bread slices .
  3. Peel the cooked potatoes and mash it .
  4. Finely chop the veges .
  5. Grate the beetroot /carrot and squeeze of excess water .

METHOD

Take the mashed potato + crushed corn in a big mixing bowl or plate .

Mix well.

Now add the other ingredients except oil + stick  –   ¼ cup of the corn kernels  + onion + beetroot + capsicum + ginger + coriander leaves + salt  + lemon juice + all the masalas + blended bread + gram flour.

Mix well .

Knead it into a firm ,non sticky dough .[should not be wet ]

If it is wet try adding bread crumbs to absorb the moisture .

Divide the dough into equal portions.

Grease your palms and roll each portion into a smooth ball.

Try to give shapes to each ball -triangle heart ,tikki , balls ,cylindrical ,bullets .

I made cylindrical shape and passed an ice lolli stick through to give a lollipop shape as shown in pic.

I also tried stuffing a piece of cheese . I have also dusted dry bread crumbs after giving shapes ,for more crispiness .

Heat oil in a kadai , once the oil is hot enough slide in the lollipops .

Turn and fry all over , till golden brown.

Drain and remove on an absorbent paper .

Serve hot with chutneys /dips /sauces/ ketchup of your choice .

NOTES

  1. Add veges of your choice .
  2. Instead of green chilli ,add peper pwdr if making for kids.
  3. Instead of ginger ,u can add ginger garlic chilli paste .
  4. U can also add kasoori methi pwdr .
  5. U can give different shapes .
  6. Instead of icecream sticks ,you can use soup sticks .
  7. For binding you can use gram flour or cornflour .
  8. Don’t over cook the potatoes .
